  2. En una cazuela o sartén para fideuá (paellera) ponemos un chorrito de aceite de oliva, el ajo y la cebolla picados, cocinar 5-10 minutos. Añadimos los fideos, rehogar un poco y añadimos el caldo, unas hebras de azafrán machacado con un mortero, y un poco de sal.
  3. Tapamos la cazuela y en que rompa a hervir bajamos el fuego y cocinamos unos 12minutos aproximadamente (tenéis que ir viendo). Cuando veáis que se queda sin agua casi al final de la cocción a falta de tres minutos para apagar el fuego, añadimos el salmón salpimentado, en trozos y con la piel.
  4. Terminar de cocinar tres minutos y apagar el fuego. Dejar reposar, el salmón terminará de hacerse con el mismo calor. Una vez esté añadimos perejil picado por encima o eneldo a vuestro gusto.
  5. Nota: yo el salmón lo compro fresco y lo congelo por anisakis.
