  2. 250 gr. Merluza
  3. Al gusto Cabeza y Espinas de la Merluza
  4. 1/2 Cebolla
  5. 1 Zanahoria

  8. 1 Diente Ajo
  9. 1 Huevo
  10. 1 Cucharada Perejil Fresco
  11. 1/2 Limón
  12. 1 Hoja Laurel

  1. Coloca los Fideos en un placa de asar y Échales un Chorro de Aceite de Oliva ; Embadurna los Fideos muy bien con las manos e introdúcelos en el Horno a 160 ºC Durante unos minutos removiendo de vez en cuando hasta que estén dorados
  2. Prepara el Fumet poniendo en una olla agua fría las Espinas del Pescado bien enjuagadas y la Verdura troceada y limpia; Cuando empiece a hervir desespuma y deja cocinar durante 20 minutos ; Cuela y Reserva caliente
  3. En el vaso de la batidora eche el Ajo pelado y un ramillete de Perejil; añade Aceite y bate hasta obtener una Salsa fina.
  4. Calienta tu Paella o Recipiente lo más bajo posible, añade 3-4 cucharadas de Aceite de Ajo y Perejil y los Fideos Tostados.
  5. Moja con el Caldo de Pescado bien caliente; justo 1 cm. por encima de los Fideos
  6. Hierve Fuerte al principio 2 minutos y los otros 6 introduce en el Horno a 200 ºC hasta que sequen.
  7. Salpimienta la Merluza que ya estará limpia y cocínala en su punto con una gota de Aceite en una Sartén Antiadherente.
  8. Monta una Salsa rápida con el turmix añadiendo un Huevo a la Salsa verde y emulsionándola; sazónala y échale Zumo de Limón.
  9. Cuando los Fideos salgan del Horno coloca encima los Lomos de Merluza y decora con la Salsa Verde Emusionada como se muestra en la Foto.
  10. Sirve bien caliente
    * Acompáñala con un buen Vinito Blanco Rico y Fresquito.
