Cuando ya estén blandos le vamos a incorporar la salsa de tomate y un cazo de caldo, en este momento le añadimos los mejillones, que habremos sacado de las cáscaras.
  3. Finalmente ponemos los fideos, sazonamos, le añadimos el colorante y los cubrimos con el caldo, si está caliente mejor. Aproximadamente necesitaremos 1 litro de caldo pero tened siempre algo más, porque dependerá del fuego que apliquéis, puede que se evapore una parte y no os llegue.
  4. Cuando los fideos ya han engordado y están casi a punto podemos tomar la opción de terminar la fideuá en el horno, encendemos el gratinador y dejamos que se tueste levemente la parte superior de la misma, para ello evidentemente habremos utilizado una sartén o cazuela totalmente metálica.
