  2. En otro bol mezclar los dos quesos o el mascarpone que deben estar a temperatura ambiente romper la estructura con un batidor a mano e incorporar el sabayon (no batir mucho). Mezclar en forma envolvente.
  3. Batir la crema a medio punto. Mezclar al primer bol en forma envolvente. Reservar la crema tiramisú tapada con papel film en contacto.
  4. Ensamblado del tiramisú En el molde donde voy a realizar el tiramisú debe tener una base de cartón sujetada al molde con papel film al molde Forrar con una faja de acetato la parte interna del molde.
  5. Embeber el disco de vainilla en el almíbar de café colocar dentro del molde. Embeber las vainillas solamente la base e ir colocando alrededor del molde bien apretadas una de la otra Colocar el 50% de la crema tiramisú, embeber el segundo disco y colocar sobre la crema tiramisú.
  6. Colocar el resto de la crema tiramisú. Llevar al frío por 12hs. Retirar y decorar con chocolate rallado y espolvorear con caco amargo.
