- Hacer un merengue francés con las claras del huevo; batir las claras hasta que suba su tamaño, añadir el azúcar en forma de lluvia. Agregar la fécula de maíz cernida. No batir demasiado.


- Montar a punto de listón las yemas con el azúcar y la vainilla.

- Unir las yemas con el merengue e incorporar con cuidado la harina cernida envolventemente.


- Añadir la mezcla en una manga y dar forma de soletas en la charola con papel encerado o untar mantequilla y harina en la charola. Cubrir con azúcar blanca y Glass. Hornear a 180°C.


- Con la misma manga hacer un círculo para la base del tiramisú.

- Hacer un jarabe con el agua y azúcar. Cuando se haya espesado lo suficiente sacar del fuego y enfriar. Agregar el café.
- El vino se puede sustituir por Amaretto. A cremar el queso. Hacer una paté a bombe con las yemas y el azúcar. Incorporar poco a poco para evitar separar la mezcla. Agregar el vino moviendo bien para homogeneizar la preparación.
- Hidratar la grenetina, reposar, derretir a baño maría e incorporar en forma de hilo. Batir la crema a medio punto e incorporar a la mezcla anterior. Ponerle un poco del jarabe de café.
