  1. Comenzamos con el bizcocho, batimos los huevos con el azúcar con la batidora a velocidad media alta hasta formar una crema blanquecina. A continuación añadimos la harina con el café soluble tamizado y batimos a mano hasta incorporar bien todos los ingredientes.
  2. Preparamos una bandeja plana con papel de hornear y echamos la masa del bizcocho, repartiendo bien por toda la bandeja. Precalentar el horno a 180°C arriba y abajo, cuando esté caliente metemos la masa y horneamos durante unos 14-15 min.
  3. Procedemos a hacer la crema, separamos las claras de las yemas, batimos las yemas con la mitad del azúcar al menos unos 5 minutos, batimos el queso hasta que quede blandito, y lo incorporamos y mezclamos con las yemas.
  4. Montar las claras con el resto del azúcar a punto de nieve. Incorporar suavemente a la crema anterior (aconsejo meterla en la nevera unas 2 horitas).
  5. Preparamos el almíbar. Ponemos una capa de bizcocho y lo mojamos con el almíbar (si pinchamos el bizcocho penetrará mejor el almíbar) le añadimos una capa de crema, le ponemos el otro bizcocho y lo mojamos, y terminamos con una última capa de crema, para finalizar le espolvoreamos con el cacao en polvo.(mejor a la hora de servir).
