Steps to make to make Tiramisú
- Realizar la mise en place.

- Separar las claras y yemas.


- Para las soletas batir las claras con la mitad del azúcar refinada hasta llegar al punto de turrón.
Batir las yemas con el azúcar restante hasta blanquear (debe de verse burbujas en la superficie).


- Colocar la harina en forma de lluvia alternando con las claras hasta que se termine la preparación.



- Colocar en una manga la preparación y colocar tiras sobre el papel encerado, cernir azúcar glass sobre las soletas.
Hornear durante 10 minutos a 180°C.

- Para el jarabe hervir el agua con el azúcar hasta conseguir la bola suave (así sabremos que ya estará listo).
Elaborar una paté a bom con las yemas y el azúcar e incorporar el jarabe y el licor de café para homogeneizar la preparación.

- Hidratar la grenetina en el microondas de 10 en 10 segundos e incorporar en forma de hielo al queso crema previamente acremado.


- Batir la crema y agregar a la preparación anterior y agregar un poco de licor de café.



- Para el montaje tomar como base las soletas y remojar con el jarabe.
Agregar la crema Mascarpone y alisar con la ayuda de una espátula.
Continuar agregando un poco de cocoa, realizar el mismo procedimiento hasta terminar con la preparación.


- Llevar a refrigeración por 1 hora, al momento de presentar retirar el aro, agregar unas fresas y espolvorear cocoa al gusto.
