- Vamos a empezar con la base de los cupckakes para ello vamos a derretir la mantequilla y batimos junto con el azúcar, cuando blanquee añadimos los huevos uno a uno hasta integrar completamente. Añadimos la leche y el café. Cuando esté todo integrado tamizamos nuestros ingredientes secos y añadimos a nuestra mezcla anterior. Integramos bien y procedemos a llenar nuestras cápsulas. Horneamos 20 min a 180°


- Cuando estén hechos dejamos enfriar. Mientras enfrían vamos a hacer el almíbar para después empapar nuestros cupckakes. Echamos el café, azúcar y licor a un cazo y llevamos al fuego por 5 minutos. Dejamos enfriar. A continuación pinchamos los cupckakes varias veces y con una geringa vamos a ir empapando los cupckakes con el almíbar. Yo eche 5ml por cupcake, pero esto es al gusto. Si te gusta más mojado echas más y si es al contrario pues añades menos.reservamos
- Ahora vamos a hacer el frosting para ello primero vamos a añadir la gelatina al agua y reservamos. A continuación montamos la nata. En otro bol batimos el mascarpone con el azúcar glass hasta que esté bien integrado, añadimos vainilla y mezclamos. En este punto calentamos la gelatina 5 segundos y añadimos líquida a la mezcla de mascarpone. Integramos bien y añadimos a la mezcla poco a poco la nata con movimientos envolventes. Pasamos a una manga y vamos montando nuestros cupckakes.
