- Lo primero que debemos hacer es separar las yemas de las claras de huevo. Por un lado batimos las claras a nieve y reservamos
- Por otra parte, batimos (mejor si es por unos minutos a baño María) las 3 yemas con los 150 gramos de azúcar, hasta blanquear. Retiramos del baño María e incorporamos el queso hasta obtener una mezcla homogénea
- A continuación, añadimos las claras batidas a nieve, en forma envolvente hasta integrar todo, y seguido de eso, incorporar a la mezcla los 250 ml de crema doble previamente batida a punto firme
- Por último, añadimos la gelatina sin sabor, previamente disuelta en 5 cucharadas de agua hirviendo
- Una vez lista la crema, procedemos al armado del postre. Yo utilice una asadera de 26 por 17 cm, pero se puede armar en vasitos individuales. Se comienza con una capa de plantillas (o vainillas) embebidas en café fuerte (mezclado con un toque de licor si se desea) y se coloca por encima la mitad de la crema. Yo coloqué en total 2 capas de plantillas y 2 de crema
- Para culminar, se espolvorea la última capa de crema con un buen cacao amargo, y se lleva al freezer por 2 horas, o al refrigerador por 4 horas (o lo que es mejor, de un día para el otro) Y a disfrutar!
