- Salpimentamos los filetitos, los pasamos por harina y los marcamos en una cacerola amplia con un poco de aceite. Si no caben todos los hacemos en dos tandas. Cuando estén marcados se reservan.

- En el mismo aceite sofreímos la cebolla y el ajo, picados muy pequeño, en brumoise, ponemos un poco de sal y dejamos que se haga. Cuando la cebolla empiece a dorar agregamos el tomate. Se hará a fuego lento, tapado durante unos 20 minutos.
- Mientras tanto picamos las setas, estas al ser de cultivo están muy limpias, así que apenas les pasamos un paño.
- Cuando el sofrito esté hecho, añadimos las setas, la carne, el vino, laurel y ponemos un poco de agua, la suficiente para que quede cubierto. Se deja cocinar tapado a fuego lento, estará hasta que los filetes estén tiernos.

- En una sartén aparte, tostamos los piñones que se agregarán en el último momento.
